Bread Butter Pudding with Peach n Raspberry


Salam hujung minggu semua,

Hari ni ahkak plan nak gi jalan2, jadi kita update resipi cepat2 ek. Hihi...neway, ini dah kira kali ketiga buat bread butter pudding ni. So far resipi ni yang paling marbeles, memang kena sangat ngan tekak ahkak ni. Selalu cuba resipi lain, jadi kering bread puddingnya, yang ni memang sangat moist. Nak lagi sedap taburkan demerara sugar kat atas dia, baru lah rasa crunchy bila gigit bahagian atas pudding tu. Cuma kalau kat Malaysia memang payah sikit nak jumpa demerara sugar ni, kalau ada pun mungkin dekat Cold Storage rasanya.


Ok, resipi ni dapat dari buku Mum's Favourite Recipes ni. Buku ni beli kat kedai buku dekat Bath sana nun, jauh ni dik non, kalau tak cuba semua resipi dalam ni rugi...rugi. Tapi beli buku ni time sale. Harga asal £14.99 kira2 dalam RM75, tapi masa sale dapat dalam £5, so dalam RM25. Banyak resipi tradisional omputeh ler dalam ni tapi boleh je di ubahsuai ikut selera sendiri...

Ok, jom intai resipi.


Bahan binaan :-

5 -10 slices of day-old bread
50 g unsalted butter, plus extra for greasing
50 g sultanas (ah kak ganti ngan peach n raspberry)
25 g mixed peel (optional - tak letak pun)
grated rind of 1 lemon
300 ml single cream and 300 ml milk (boleh juga kalau pakai 600 ml milk)
2 eggs plus 2 egg yolks
25 g sugar (add more kalau nak manis)
1/2 teaspoon of grated nutmeg (tak letak, boleh ganti ngan cinnamon)
1-2 tablespoon jelly marmalade, heated (ganti ngan demerara sugar)



Cara binaan:-

1. Spread the slices bread with butter, cut into traingle.
2. Place a layer of bread triangle in the base of a greased pie dish (or any bekas tahan panas)
3. Sprinkle the sultanas, mixed peel and lemon rind ( ah kak susun peach and raspberry)
4. Cover with the remaining bread triangle.
5. Beat the cream with milk, eggs, egg yolks and sugar in a bowl. Pour the mixture over the bread. Cover and leave to stand for 30 minutes.
6. Sprinkle the nutmeg (I sprinkle demerara sugar) over the surface and bake in a preheated oven a 180C or gas mark 4 for 30-40 minutes.
7. Remove from the oven and brush the hot marmalade over the top (I skipped this).




Ok, dah ready to be serve with cream or fresh fruit. Makan macam tu pun sedap sebab the texture of the pudding is so deliciously creamy. Selamat mencuba.
